Today marks the start of my least favorite holiday... Passover.
Starting at sundown, I have to cut almost all carbs out of my diet... anything resembling bread. This is never easy for me as I have the appetite of an NFL linebacker and find myself to feel quite limited whenever this week rolls around.
This year, I'm going to try to use the time off to my advantage and get a little creative... I'm even thinking of using it as an excuse to check a goal off my list: cook a meal in the shoebox! When I first moved to New York, I had one dish that I made fairly often: chicken in peanut sauce with sesame sautéed veggies. Easy and delicious. Sometimes with noodles, but not now. Wah.
I am breaking Passover one day early, however, because I am going to Texas next Friday. I can't bare the thought of being in Hill Country with dietary restrictions. Food is half the reason I'm going. It wouldn't be right. (I told my parents and they gave me the green light, so I don't feel as bad.)
