What I Ate Wednesday

I learned about "What I Ate Wednesday" on the Live Run Love Yoga blog. If you follow me on Instagram, you know that I love taking pictures of food and similarly, I love reading about what people are eating. If you're reading this and you have a blog... hop on!



Breaakfast. Lately, I eat almost the same breakfast every weekday. A bowl of berries tossed with granola and honey. Weekday mornings are tough for me but I never skip breakfast. Literally... I don't think I've ever skipped breakfast in my 28+ years of living. To make life a bit easier, I wash and slice the berries the night before and cover the bowl with plastic wrap. That way, I only have to drizzle the honey and measure out/add the granola in the morning. My pre-run breakfast (oh okay, sometimes my out-of-berries breakfast) is slice of grainy bread with peanut butter (I always buy Peanut Butter Co.), honey, and granola. I pick up a coffee or latte if time allows, and my mid-morning snack is usually a banana.



My boyfriend and I always eat breakfast together on the weekends and it's the best. I make us scrambled eggs with a little organic mild cheddar and turkey bacon. I put a big bowl of berries on the table and make us (actually, usually just me) a coffee with vanilla creamer. 




Lunch. Lunch during the week is my least favorite meal. In my life, it's rarely relaxed or delicious. On Monday, I actually remembered to go meatless! I made a PBJ and chose a pear and pretzel sticks as "sides". I like my pears when they're near rotting. I find them softer and sweeter that way. Yesterday, I packed the same exact lunch but decided to ditch it at the last minute for a Cosi chicken caesar salad and iced tea. It sure was a Bluesday, and that made it a bit less gloomy. (I forgot to take a picture.) For lunch today, I'll be eating The Pioneer Woman's Simple Sesame Noodles. Yum. On the weekends, I almost always dine out for lunch. Or brunch, if that's the case.



Oh, and I bought a box of these on Monday and have been snacking on them (but not too many!) during the day. I mean, it's for a good cause! And I'm limiting myself to one box.



Dinner. On Sunday night, I made Iowa Girl Eats Garlic-Parmesan Chicken again, as well as a creamy cauliflower rice I found on her website, too. For Meatless Monday, I whipped up a caesar and ate some of the leftover rice. Yesterday was a bad day, so I made my ultimate "I feel sorry for myself" meal, which is... you guessed it... The Pioneer Woman's Simple Sesame Noodles. Hence my leftovers for lunch today. Tonight I'm meeting my friend Bianca for dinner... tuna tartar! And tomorrow night is date night at a new restaurant. So excited!



I must have been feeling really sorry for myself yesterday, because after those noodles... This happened.


This was fun! What are you eating this week? This proved to me that I should probably shake it up a bit next week, put aside the 3 or 4 recipes I'm comfortable with, and try some new things in the kitchen!
